Believe it or not, potatoes can be healthy. Yes, they are loaded with carbs and people who are watching their carbs work hard at avoiding them. Despite that, potatoes can be quite healthy. Even people who are watching their carbs. Truth be told, we all need some carbs and those carbs can be in the form of potatoes cooked in healthy ways. There are several different ways you can prepare them to help them be healthier for you and your family. Here are some recipes for to try, all utilizing potatoes and Young Living essential oils.
Mashed Potatoes
2 pounds peeled potatoes of your choice, roughly chopped
3 cups water
1 and 1/2 teaspoon of your choice salt
1/3 cup low-fat 1% buttermilk
1/4 cup light sour cream
2 tablespoons whipped butter
Young Living dill essential oil
Young Living black pepper essential oil
Fresh chives, parsley and dill for the optional garnish
Put the chopped potatoes in your instant pot. Add enough water to just cover. Salt the potatoes to taste. If you aren’t using an instant pot, cook as you normally would on your stovetop.
Cover and then cook on the high-pressure setting for 10 minutes. Check to see if the potatoes are soft. When a sharp knife can be inserted through the potato easily, they are fully cooked.
Drain the water, but be sure to save 1/2 cup of the water. Add the butter, sour cream and buttermilk. Mash to your desired consistency.
Add three drops of Young Living dill essential oil and two drops of Young Living black pepper essential oil. If you prefer a more dill and pepper, add the essential oils, one drop at a time, to your desired taste.
Add salt to taste. Keep warm until you are ready to serve. If you’re eating them at a later time, add the water you saved so they won’t dry out.
Garnish with freshly chopped chives, parsley and/or dill and then serve.
Fried Potatoes
2 tablespoons cooking oil of choice
1 large potato of your choice
1 medium onion, sliced
2 drops Young Living black pepper essential oil
3 drops Young Living lemon essential oil
½ teaspoon salt
Slice the potato and onion with a mandoline or your usual method.
Heat oil in a large skillet over medium-high heat until shimmering. Add potato slices and fry, without stirring, until the potato starts to brown. This should take about 8 to 12 minutes.
Add onion slices. Stir to combine. Cook until onions are translucent and the potato slices are brown on the second side. This should take 5 to 8 minutes. Add the Young Living essential oils to the salt and distribute evenly over the dish.
Roasted Potatoes
2 pounds potatoes of your choice and cut into quarters
2 tablespoons cooking oil of your choice
1 teaspoon salt
2 drops Young Living black pepper essential oil
2 drops Young Living rosemary essential oil
Preheat oven to 450 degrees F
Place potatoes in your roasting pan. Toss with cooking oil. Spread them out evenly and in a single layer.
Bake in your preheated oven for 20 minutes, stirring occasionally so the potatoes brown evenly.
Remove cooking pan from your over. Add the Young Living oils to the salt and spread evenly over the potatoes. Serve immediately.
